Ingredients

1 lb boneless lamb shoulder ( or ground lamb ) or 1 lb boneless lamb breast , cut into pieces ( or ground lamb )
1/2 lb lamb liver , cut into pieces
1/2 cup water
1 small onion , chopped
1 large egg
3/4 teaspoon salt
3/4 teaspoon pepper , black
1/2 teaspoon sugar
1/4 teaspoon ginger , ground
1/8 teaspoon clove , ground
1/8 teaspoon nutmeg , ground
1 cup old fashioned oats

Instructions

1.Preheat oven to 350 F.
2.In a food processor, pulse the lamb shoulder, lamb liver, and water until well combined but still chunky. If using ground lamb, mix with water in a bowl.
3.In a large bowl, beat the egg and mix in the onion, salt, black pepper, sugar, ginger, clove, and nutmeg. Stir in the oatmeal until well combined.
4.Add the meat mixture to the bowl and mix well with your hands.
5.Grease a loaf pan and line with parchment paper. Fill with the meat mixture and pat down firmly.
6.Cover tightly with foil and bake for 1 hour and 20 minutes.
7.Let cool for 10 minutes before slicing and serving.
