Breadfruit is a staple in many tropical regions around the world and is often used as a starchy vegetable in Caribbean cuisine. This recipe takes a traditional approach to cooking breadfruit by simmering it in a seasoned coconut sauce. The result is a creamy, flavorful dish that is perfect as a main course for vegans and vegetarians or as a side dish for meat-eaters. The rich and hearty nature of the breadfruit combined with the sweet and creamy coconut sauce create a perfect balance of flavor and texture.

Instructions

1.Cut the breadfruit into small pieces and set aside.
2.Peel and grate the coconuts and add 4 cups of boiling water to the grated coconut. Combine well and let sit for 20 minutes.
3.Strain the mixture through a cheesecloth or fine mesh sieve and set aside the coconut milk.
4.In a blender, combine the onion, garlic, thyme, bouillon, salt, and 1/2 cup water. Blend until smooth.
5.Heat the cooking oil in a large pot over medium heat. Add the blended mixture and cook for 5 minutes, stirring occasionally.
6.Add the breadfruit and coconut milk to the pot and stir well. Bring to a boil, then reduce the heat to low and let simmer for 30-40 minutes, or until the breadfruit is tender.
