1 peppercorn
1/4 teaspoon dried oregano
1 teaspoon salt
1 teaspoon olive oil
1/2 teaspoon white vinegar or 1/2 teaspoon lime juice

Instructions

1.Preheat oven to 325 degrees F.
2.Rinse turkey inside and out, dry thoroughly with paper towels.
3.In a small bowl, combine garlic, peppercorn, oregano, and salt to make the adobo rub.
4.Rub turkey inside and out with olive oil and vinegar or lime juice.
5.Apply adobo rub to turkey, pushing it in between the turkey skin and meat.
6.Place turkey in a roasting pan, breast side up, and roast for 3 1/2 to 4 hours, until an internal temperature of 165 degrees F is reached in the thickest part of the turkey.
7.Let turkey rest for 20-30 minutes before carving.
