Ingredients

2 lbs mashed potatoes ( hot )
2 eggs ( lightly beaten )
4 teaspoons cornstarch
2 tablespoons olive oil
1 lb ground beef
4 tablespoons sofrito sauce
4 tablespoons tomato sauce
2 teaspoons dried oregano
1 teaspoon salt
vegetable oil ( for deep frying )
Stuffed Potato Balls ( Papas Rellenas ) are a popular snack and appetizer in Latin America, especially in Peru. Instructions

1.Heat olive oil in a pan.
2.Add ground beef and sauté until fully cooked.
3.Add sofrito sauce, tomato sauce, dried oregano, and salt. Stir and cook for about 5 minutes.
4.Set aside the beef mixture and let it cool.
5.In a large bowl, mix the mashed potatoes and eggs.
6.Add cornstarch and mix well.
7.Take a handful of the potato mixture and flatten it out with your hand.
8.Add about 1 tablespoon of the beef mixture in the center and shape the potato mixture around it to form a ball.
9.Repeat until all of the potato mixture and beef mixture are used.
10.Heat the vegetable oil in a deep saucepan until it reaches 350°F (180°C).
11.Fry the stuffed potato balls for about 4-5 minutes or until golden brown.
12.Take out the potato balls, let them cool on a paper towel to remove excess oil, and serve.

PROS

Crispy on the outside and fluffy on the inside, these stuffed potato balls will be a hit at any gathering or party.
