The addition of crispy onions and fresh avocado provides a textural contrast to the crispy shrimp. This dish is a flavorsome and satisfying meal that is perfect for a special occasion, or a cozy weeknight dinner.

Instructions

1.In a pan, heat rum, star anise, cinnamon stick, juniper berries, lemon zest, clove, bay leaf, dark molasses, and orange juice until the mixture thickens.
2.In a separate pan, heat canola oil and fry the julienned red onion until crispy and set aside on paper towels.
3.Season shrimp with salt and pepper, and coat with buttermilk and flour mixture in a separate bowl.
4.Fry the shrimp in the canola oil until golden brown and crispy.
5.In a small bowl, mix sliced avocado and lemon juice. Top with fried onions and cilantro, and serve beside the Puerto Rican Shrimp.
