Ingredients

1 cup sugar
1/4 cup water
2 cups boiled and mashed breadfruit ( pumpkin or sweet potato ok )
8 ounces cream cheese
1/2 cup sugar
5 eggs
13 ounces evaporated milk
1 teaspoon vanilla extract
Breadfruit Custard or Flan De Pana is a popular dessert in the Caribbean. This recipe offers an alternative to the standard caramel flan using breadfruit instead of milk. The breadfruit gives the flan a unique nutty flavor, while still maintaining the creaminess that flans are known for. Served cold, this dessert is perfect for a hot summer day or a refreshing after-dinner treat.

Instructions

1.Start by preheating your oven to 350°F.
2.Place sugar and water in a saucepan over medium heat. Stir until sugar dissolves. Cook sugar mixture for about 10-15 minutes or until golden brown. Pour caramel into an 8-inch round cake pan and swirl it to evenly coat the bottom and sides then set aside.
3.In a food processor, blend breadfruit until smooth and set aside.
4.In a large bowl, beat cream cheese and sugar until creamy. Add eggs, one at a time, beating well after each addition and scraping down the sides of the bowl as needed. Add mashed breadfruit and mix until well combined. Add evaporated milk, vanilla extract, and mix well.
5.Pour mixture through a strainer into prepared cake pan.
6.Place cake pan in a large baking dish. Add enough hot water to baking dish to come halfway up the sides of the cake pan.
7.Bake in the preheated oven for 55-60 minutes or until a knife inserted in the center comes out clean. Remove from oven and let it cool.
8.Cover and refrigerate for at least 2 hours or overnight.
9.When ready to serve, run a knife around the edge of the cake pan. Invert onto a serving plate.
