1 lb chicken drumstick
1 tablespoon adobo seasoning
0.5 packet sazon seasoning
1/2 teaspoon salt
5 large red potatoes , peeled and thickly sliced
1 large red bell pepper , seeded and chopped
1 large green bell pepper , seeded and chopped
1 large onion , chopped
5 garlic cloves , minced
1 bunch fresh cilantro , chopped
2 tablespoons olive oil
1/2 cup dry red wine
1 teaspoon ground cumin
1 teaspoon dried oregano
2 bay leaves

Instructions

1.Season chicken with adobo and sazon seasoning (reserve half of the sazon seasoning).
2.In a Dutch oven or large pot, heat olive oil over medium-high. Add in chicken and brown on both sides. Transfer chicken onto a plate lined with paper towel.
3.In the same pot, sauté the onion, green and red pepper, cilantro, and garlic for approximately five minutes.
4.Add in red wine, cumin, and oregano. Continue to sauté for three minutes.
5.Add in sliced potatoes and bay leaves. Pour in chicken broth to cover the potatoes. Reduce heat to medium-low, and let simmer for 35-40 minutes or until the potatoes are fork-tender.
6.Add the chicken back in, and sprinkle with the remaining sazon seasoning. Let simmer for an additional ten to fifteen minutes.
7.Enjoy with a side of rice.
