Ingredients

6 ounces butter
1 1/2 cups icing sugar
4 eggs ( separated )
1 teaspoon vanilla
2 cups pineapple slices ( diced )
1 cup brazil nut ( chopped )
1 sponge cake , already baked ( I use a store bought , lemon sponge , box cake . I think the lemon gives a better flavour than a plain )
2 cups whipped cream

Instructions

1.In a large bowl, cream the butter and icing sugar together until light and fluffy.

4.In a separate mixing bowl, whisk the egg whites until stiff peaks form.
5.Gently fold in the egg whites into the pineapple mixture.
6.Cut the sponge cake into thin slices.
7.In an 8-inch square pan, place a layer of sponge cake slices on the bottom.
8.Pour half of the pineapple mixture on top, and then add another layer of sponge cake slices.
9.Pour in the rest of the pineapple mixture.
10.Refrigerate the cake for at least 4 hours or until it is set.
11.Spread the whipped cream on top of the cake and decorate with some extra diced pineapple and nuts.
