Ingredients

3 tablespoons oil
1 onion , chopped
1 red bell pepper , chopped
5 tablespoons tomato paste
salt and pepper
1/2 teaspoon thyme
1 teaspoon paprika
4 cups water ( traditional ) or 4 cups crab stock ( my tweak )
2 cups long grain rice
2 cups pigeon peas , canned
4 whole crabs

Instructions

1.Rinse the crabs in cold water and set aside.

3.Add the tomato paste, salt, pepper, thyme, and paprika. Stir to combine.
4.Add the water or crab stock and bring the mixture to a boil.
5.Add the rice, pigeon peas, and whole crabs. Stir well, then cover the pot and reduce the heat to low.
6.Cook for approximately 20 minutes or until the rice is cooked through and the liquid has been absorbed.
7.Remove from heat, discard the crabs, and fluff with a fork before serving.
