Uncle Rick's Caribbean Chicken Curry (Revised) is a delicious adaptation of a classic Caribbean dish. The recipe is inspired by traditional Jamaican curry chicken, which is known for its rich and spicy flavor. This version uses boneless skinless chicken thighs instead of a whole chicken, making the dish easier to cook and more convenient to eat. The curry is infused with Indian spices, giving it a unique twist and adding an extra layer of complexity to the flavor profile. This chicken curry is perfect for a family dinner or a potluck with friends. Serve it over rice or with a side of naan bread to complete the meal.

Instructions

.Start by peeling and dicing the potatoes into cubes. Set aside.
.In a large pot, heat the canola or olive oil over medium heat.
.Add in the diced onions and sauté for 3-5 minutes until they turn translucent.
.Toss in the chopped garlic, ginger puree, hot curry powder, cayenne powder, salt and garam masala. Stir for 30 seconds to toast the spices.
.Add in the chicken thighs and cinnamon stick. Stir for 5 minutes until the chicken is lightly browned.
.Pour in the chicken stock and bring to a boil. Reduce the heat, and let curry cook for 30 minutes.
.After 30 minutes, add the diced potatoes and let them cook through for another 20 minutes.
.Once the potatoes are tender and the curry is thickened, check for seasoning and adjust as needed.
.Sprinkle paprika and toasted shaved almonds as garnish before serving.
