Ingredients

2 roasting chickens , quartered
1 cup vegetable oil
3/4 cup white wine vinegar
1/2 cup dry sherry
1 teaspoon minced garlic
1/2 teaspoon poultry seasoning
2 teaspoons caribbean seasoning ( see my recipe for Caribbean Seasoning )
2 carambolas , sliced
1/4 cup lime juice
1/4 cup honey
2 tablespoons white wine vinegar
1 tablespoon soy sauce
1 tablespoon minced garlic
1 dash hot pepper sauce
3 -4 carambolas , sliced

Instructions

1.In a blender or food processor, combine the vegetable oil, white wine vinegar, dry sherry, minced garlic, poultry seasoning, Caribbean seasoning, and 2 sliced carambolas. Puree until smooth.
2.In a bowl, whisk together lime juice, honey, white wine vinegar, soy sauce, minced garlic, hot pepper sauce and remaining sliced carambolas.
3.Heat the barbeque grill to high.
4.Brush the chicken pieces with the pureed marinade on both sides.
5.Place chicken on the grill and cook for about 20 minutes, turning occasionally and brushing with remaining marinade, until the chicken is cooked through.
6.Let the chicken rest for 5-10 minutes before serving.
