1 whole chickens
1 lemon , cut in quarters
salt and pepper
4 tablespoons butter , softened
1/2 teaspoon ground red pepper
1 garlic clove , crushed
1/2 teaspoon ground coriander
The Barbados Roast Chicken is a classic Caribbean dish that is perfect for any occasion. Instructions

1.Preheat the oven to 375°F.
