4 1/2 lbs ham ( unsmoked )
1 orange
2 limes
1 bay leaf
3 fresh parsley sprigs
6 black peppercorns
5 garlic cloves , crushed
1 tablespoon dried oregano
2 hot red chili peppers , seeded and minced
2 tablespoons brown sugar
fresh ground black pepper
Baked Ham With Orange and Lime is the perfect dish for any special occasion. Instructions

1.Preheat the oven to 160C/325F/Gas Mark 3.
2.Score the rind of the ham with a sharp knife in a diamond pattern.
3.Cut the orange and limes in half and squeeze the juice over the ham.
4.Add the fruit to the baking dish along with the bay leaf, parsley, peppercorns, garlic, oregano, chili peppers, brown sugar, and black pepper.
5.Pour 2 cups of water into the dish and cover it with foil.
6.Bake for 2−2 1/2 hours, or until the internal temperature of the ham reaches 140F on a meat thermometer.
7.Remove the foil and bake for an additional 20 minutes, or until the rind is crispy.
8.Let the ham rest for 10-15 minutes before carving it.
