Ingredients

2 cups yellow cornmeal
8 ounces fresh okra ( or 1 package frozen cut okra )
1/4 teaspoon pepper
1/4 cup butter or 1/4 cup margarine
1 teaspoon salt
3 cups water
Cou-Cou is a traditional dish of Barbados made by boiling cornmeal and okra in water until it becomes a thick mixture. It's a popular side dish to serve with flying fish, one of the national dishes of Barbados. Instructions

1.In a large pot, bring the water to a boil.
2.Add in the okra and pepper, and let it cook for 5-7 minutes, or until the okra is tender.
3.Add in the cornmeal and salt, whisking continuously to avoid clumps.
4.Reduce heat to medium-low and stir in the butter/margarine.
5.Cook for about 15-20 minutes or until the mixture is thick and smooth, stirring regularly.
6.Remove from heat and serve with desired main dishes.

Cou-Cou is a low-fat, gluten-free, and vegan alternative to polenta, packed with fiber and nutrients.

CONS
