Ingredients

1 large green plantain
1 quart water
1 tablespoon salt
vegetable oil
1/4 cup olive oil
1/4 cup white vinegar
4 garlic cloves , minced
1 teaspoon sazon goya ( try my homemade version )

Instructions

1.Peel the plantain and slice thinly with a mandolin. Soak the slices in salted water for 5 minutes.
2.Drain the water and pat dry the slices.
3.Heat the vegetable oil in a fryer to 350°F.
4.Fry the slices until golden for 3-5 minutes.
5.Remove the slices from the oil and drain the excess oil on paper towels.
6.Mix the olive oil, white vinegar, garlic, and sazon goya in a large bowl.
7.Add the plantain slices and toss well. Serve immediately.
