Ingredients

3 egg yolks
1 pinch salt
1/3 cup sugar ( or raw sugar )
2 tablespoons flour
1 cup milk
1 tbsp.cruzan dark rum
1 vanilla bean , split lengthwise
1 tablespoon butter , unsalted
1/4 cup heavy cream , whipped
1 sheet puff pastry , thawed ( about 9-inch square )
1 tablespoon brown sugar
2 tablespoons butter , unsalted
1 lime , juice of
3 bananas ( ripe , but firm )
1 large mango ( ripe , but firm )
2 tablespoons powdered sugar
1/2 teaspoon cinnamon , ground
Napoleon De Banano Y Mango (Hojaldre) is a delicious treat with layers of crispy pastry, fruity mangoes and ripe bananas, and flavorful whipped cream. The recipe hails from Latin America where people love to enjoy it during family gatherings, parties, and picnics. It is a perfect dessert to enjoy on a hot summer day and can be made a day ahead or stored in the fridge for later.

Instructions

1.In a medium-sized saucepan, combine the egg yolks, salt, sugar, flour and milk.
2.Add the vanilla bean to the mixture and bring to a boil over low heat. Reduce the heat and cook for 1-2 minutes, stirring constantly until thickened.
3.Remove from heat and stir in the dark rum and 1 tablespoon of unsalted butter.
4.Pour the mixture into a bowl and refrigerate.
5.Preheat the oven to 400°F (200°C).
6.Roll the puff pastry out to the thickness of 1/8 inch.
7.Cut the pastry dough into 4 pieces of the same size and place them on a baking sheet lined with parchment paper.
8.Pierce the pastry with a fork all over and sprinkle with brown sugar.
9.Bake for 10-12 minutes or until golden brown.
10.In the meantime, peel the bananas and slice them thinly crosswise. Peel the mango and dice it.
11.In a medium-sized skillet, melt 2 tablespoons of butter and add the lime juice and cinnamon. Simmer on low heat for 1-2 minutes.
12.Add the sliced bananas and diced mango to the skillet and toss to coat with the butter mixture.
13.Remove the skillet from heat and let the fruit cool.
14.To assemble the napoleon, place a puff pastry disc on a plate. Top with a layer of whipped cream and a layer of fruit.
15.Repeat with a second and third layer, ending with a layer of whipped cream.
16.Sprinkle the top of the napoleon with powdered sugar and serve chilled.
