3 tablespoons jerk seasoning
1 cup fresh spinach leaves
1 cup toasted sliced almonds
3 tablespoons curry powder ( or paste )
1 3/4 cups coconut milk
1/2 cup vegetable stock

Instructions

1.Preheat your oven to 375°F
2.Grease a baking tray.
3.Place the pies on the tray and gently score a small circle in the middle of each one, ensuring that you do not cut all the way through, this will be the space for the filling.
4.Peel the plantains and cut them into small pieces.
5.Peel the pumpkin or butternut squash and dice into small pieces.
6.In a large bowl, mix the jerk seasoning and curry powder, and then add the pumpkin and plantain pieces, ensuring that they are fully coated with the seasoning mix.
7.Add the contents of the bowl to a baking dish and bake in the oven for 20-25 minutes, or until the vegetables are tender.
8.Remove the vegetables from the oven and set them aside to cool.
9.In a skillet or pan, heat the coconut milk and vegetable stock over low heat.
10.Add the spinach to the pan and cook until it is wilted.
11.Add the cooked vegetables to the pan and stir to combine with the liquid.
12.Let the contents of the skillet or pan cool for a few minutes.
13.Once the vegetable mixture has cooled down, divide it into each of the vol au vents.
14.Serve the vol au vents on a platter and sprinkle with toasted almonds for added crunch.
