1 boneless skinless chicken breast , cut into 1-inch cubes
2 tablespoons olive oil
2 garlic cloves , minced
1/3 cup chicken broth , homemade or low-sodium

1/2 cup frozen sweet peas
2 cups raw spinach , washed and trimmed
1/8 cup freshly grated parmesan cheese ( optional )
