Ingredients

5 oranges
120 g butter , at room temperature , plus little extra for greasing tin
280 g golden caster sugar ( or raw sugar )
3 large eggs
1 tablespoon clove , ground
2 teaspoons baking powder
30 g plain flour , sifted
140 g polenta
120 g ground almonds

Instructions

1.Preheat the oven to 180°C/160°C Fan/Gas Mark 4.
2.Grate the zest from four of the oranges and set aside.
3.Juice the oranges into a saucepan and combine with 100g of the caster sugar.
4.Heat the orange and sugar mixture until the sugar melts and the mixture has reduced by almost half, forming a thick syrup.
5.Remove from heat and set aside.
6.Grease a 23cm cake tin with butter, then line with baking paper
7.In a large bowl, beat together the butter, remaining caster sugar, and orange zest until light and fluffy.
8.Add the eggs one at a time, beating well after each addition.
9.In another bowl, whisk together the clove, baking powder, flour, and polenta.
10.Gradually add the dry ingredients to the wet ingredients, mixing well to combine.
11.Pour the batter into the prepared cake tin.
12.Bake for 40-45 minutes or until the cake is golden brown and a skewer inserted into the center comes out clean.
13.Remove from the oven and allow to cool for a few minutes before removing from the tin.
14.Drizzle the orange caramel over the top of the cake and serve immediately or store in an airtight container.
