-1 red onion
-1 red bell pepper
-1 yellow bell pepper
-2 tbsp olive oil
-8 whole wheat tortillas
-2 c shredded cheese
-Salt and pepper
-Guacamole, sour cream, and salsa for serving (optional)
Love quesadillas but looking for a healthier option? These Veggie Quesadillas are the perfect solution! Loaded with sautéed bell peppers and onions and finished with melted cheese, these quesadillas are a tasty twist on the original. Plus, they’re made with whole wheat tortillas and packed with vitamins, minerals, and fiber!

Instructions

1.Heat the olive oil in a large skillet over medium-high heat.
2.Add the onions and peppers and sauté for 8-10 minutes until softened.
3.Season with salt and pepper to taste.
4.Lay out half of the tortillas and sprinkle each with 1/4 cup of cheese.
5.Top with the sautéed veggies and then another 1/4 cup of cheese.
6.Finish with another tortilla on top.
7.Heat a separate skillet over medium heat and cook each quesadilla for 2-3 minutes on each side until crispy and the cheese is melted.
8.Cut into quarters and serve with guacamole, sour cream, and salsa if desired.
