Ingredients

1 cup unsweetened pineapple juice

20 large shrimp , peeled and deveined ( about 1 pound )
3 cups cooked white rice
1 can black beans , rinsed
salt & freshly ground black pepper
2 cups fresh pineapple chunks ( about 1/2 pineapple )
6 thick scallions , trimmed and cut into 2-inch lengths
1 head boston lettuce , washed , dried and torn
lime slice ( to garnish )

Instructions

1.In a small saucepan, whisk together the pineapple juice, lime zest, lime juice, canola oil, garlic, thyme, oregano, cinnamon, allspice, and jerk sauce.

3.In a bowl, toss the shrimp with 2 tablespoons of the marinade.
4.In a separate bowl, combine the rice, black beans, salt, and pepper.
5.In a skillet, cook the shrimp until pink, about 2-3 minutes per side.
6.Assemble the salad by layering the pineapple, scallions, lettuce, and rice mixture.
7.Top with the cooked shrimp and lime garnish. Serve with remaining marinade.
