Haitian Chicken Pâté Puffs, also known as pâté djondjon in Haiti, are a popular Haitian appetizer. These puffs are traditionally made with meat or seafood and black mushroom, but this recipe replaces the black mushroom with shredded carrot for added flavor and nutrition. The ground chicken is flavored with a blend of spices, including cloves, nutmeg, thyme, and habanero or scotch bonnet pepper, giving the puffs a rich and savory taste. The chicken mixture is wrapped in puff pastry and baked until golden brown and puffy. These puffs are perfect for parties and gatherings and are sure to impress your guests.

Instructions

.Preheat the oven to 400°F.
.Seed and chop the habanero or scotch bonnet pepper.
.Coat a skillet with cooking spray and place over medium heat. Add the chopped onion and garlic, and sauté for 1-2 minutes.
.Add the ground chicken, shredded carrot, chopped habanero or scotch bonnet pepper, tomato paste, lime juice, cider vinegar, green onion, parsley, thyme, pepper, salt, cloves, and grated nutmeg to the skillet. Stir well.
.Cook for 4-5 minutes until the chicken is browned and cooked through. Remove the skillet from the heat and set aside.
.Roll out the puff pastry on a floured surface and cut into circles using a 3-inch cookie cutter.
.Spoon a heaping tablespoon of the chicken mixture onto each circle, folding the pastry over the filling to make a half-moon shape and pressing the edges together to seal.
.Whisk the egg and water together in a small bowl. Brush the egg wash over the tops of each puff.
.Place the puffs on a baking sheet lined with parchment paper and bake for 15-18 minutes, or until puffed and golden brown.
.Serve hot and enjoy!
