Instructions

1.Begin by making the dough: In a large mixing bowl, combine the flour, salt, and baking powder. Add water and knead the dough until smooth and elastic. Cover the dough and let rest for 10 minutes.
2.In a large pot, boil the quartered potatoes in 4 cups of water with 1/2 teaspoon of salt for about 20 minutes or until the potatoes are soft and tender. Drain and transfer to a large mixing bowl. Mash the potatoes with a fork until they're smooth and even.
3.Heat a tablespoon of olive oil in a large pan over medium heat. Add finely chopped onion, green onion, and crushed garlic and sauté for 3-4 minutes until the onions are soft and translucent.
4.Add cumin, garam masala, paprika, minced hot red pepper, turmeric, salt, and pepper to the pan. Stir well and cook for another 2-3 minutes.
5.Add the onion and spice mixture to the mashed potatoes in the mixing bowl. Mix well until evenly combined.
6.Knead the dough again and divide into 16 equal portions. Roll each portion into a flat disc on a lightly floured surface.
7.Spoon a heaping tablespoon of potato mixture onto each rolled disc. Fold the sides of the dough together around the filling, pressing the edges firmly to seal.
8.In a large, deep saucepan, heat 4 cups of vegetable oil over medium-high heat. Once hot, add a few parathas at a time and deep fry for about 2-3 minutes or until golden brown and crispy.
9.Remove with a slotted spoon and drain on a paper towel. Serve hot with your favorite dipping sauce.
