Ingredients

3 tablespoons olive oil
1 medium onion , finely chopped
2 garlic cloves , minced
1/2 - 2 scotch bonnet pepper , seeded and minced
3 lbs fresh tomatoes , ripe , peeled , seeded , chopped
1/4 cup tomato paste
1/4 cup barbecue sauce ( homemade or store bought )
2 tablespoons caribbean hot sauce
1/4 cup cider vinegar ( more if needed )
1/4 cup dark brown sugar , firmly packed ( more as needed )
1/4 cup dark rum
1/4 cup water ( more as needed )
1 teaspoon dried oregano
1 teaspoon thyme , chopped fresh ( or 1/2 teaspoon dried )
salt & freshly ground black pepper

Instructions

1.Heat olive oil in a large pot over medium heat.
2.Add onion, garlic and scotch bonnet pepper. Cook until onion is soft, stirring often, about 5 minutes.
3.Add tomatoes, tomato paste, barbecue sauce, hot sauce, cider vinegar, brown sugar, rum, water, oregano, thyme, salt and pepper. Stir well.
4.Bring to a boil and reduce heat to low. Cover and simmer for about 1 hour, stirring occasionally until sauce thickens.
5.Remove from heat and let it cool.
6.Transfer the sauce to a blender or use an immersion blender to puree the sauce.
7.Strain the sauce into a clean pot and simmer for an additional 20 minutes.
8.Taste and adjust the seasoning to your preference.
9.Remove from heat and let it cool. The sauce can be rewarmed before serving.
