1/4 cup olive oil
8 garlic cloves
3 tablespoons fresh lime juice
1 tablespoon orange zest
2 teaspoons ground cumin
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 1/2 lbs boneless skinless chicken breasts
1/4 cup orange marmalade
1/4 cup light mayonnaise
1 teaspoon lime juice
1/2 teaspoon lime zest
1/2 teaspoon kosher salt , divided
1/4 teaspoon black pepper , divided
4 artisan buns ( pistolettes , etc . ) or 4 other crusty buns ( pistolettes , etc . )
4 tablespoons butter , softened
4 slices provolone cheese

Instructions

1.In a blender, combine chopped onion, fresh orange juice, fresh oregano leaves, olive oil, garlic cloves, fresh lime juice, orange zest, ground cumin, kosher salt, black pepper, and cayenne pepper. Blend until smooth to make the marinade.
2.Place boneless skinless chicken breasts in a shallow dish, pour the marinade over the chicken, and marinate for at least 30 minutes.
