4 okra
4 cups water
2 cups cornmeal
2 cups cold water
1 teaspoon salt
1 tablespoon butter
Cou-Cou is a popular Caribbean dish that has been a staple in households across many islands for centuries. Instructions

1.Rinse the okras and cut off the ends. Cut the okra into small pieces and add them to the pot with 4 cups of water.
2.Bring the pot to a boil over high heat, and continue to cook for 15 minutes.
3.While the okras are cooking, mix the cornmeal and cold water in a bowl. Set this aside.
4.After the okras have cooked for 15 minutes, use a hand-held blender to puree them in the water.
5.Add salt to the pot, keep the heat on high and bring the mixture to a boil.
6.Slowly pour the cornmeal mixture into the pot while continuously stirring the mixture with a wooden spoon.
7.Reduce the heat to low, then continue stirring the cou-cou mixture for 10 to 15 minutes until the mixture thickens and forms a smooth dough.
8.Stir in the butter near the end of cooking, then, remove the Cou-Cou from the heat and set it aside to cool.
