Ingredients

2 teaspoons vegetable oil , divided
1 medium onion , coarsely chopped
1 can pineapple chunks in juice , drained , and patted dry
1 lb frozen large shrimp , thawed peeled and cleaned
1 garlic clove , minced

1 can diced tomatoes , drained
1/4 cup canned diced mild green chili
1 teaspoon soy sauce
3 cups hot cooked rice ( optional )

Instructions

1.In a large skillet or wok heat 1 teaspoon of oil over high heat.

3.Add the remaining teaspoon of oil to the pan, then add the shrimp and stir-fry for 1-2 minutes until just pink.

5.Add the drained tomatoes, green chili, and soy sauce to the pan and stir-fry for 2-3 minutes until heated through.
6.Return the onion and pineapple to the pan and toss to combine with the shrimp mixture. Serve hot with cooked rice if desired.
