1 1/2 cups baking mix ( such as Bisquick )

canola oil ( for deep frying )
5 tablespoons fresh key lime juice
2/3 cup sweet cream of coconut ( such as Coco Lopez or Coco Casa )
1 1/2 teaspoons curry powder
1/4 teaspoon cayenne pepper
1/4 teaspoon sea salt
1/2 cup minced scallion

Instructions

2.Mix together all ingredients until well combined and let it rest for 5-10 minutes.

4.Drop spoonfuls of the mixture into the hot oil and cook for about 2-4 minutes on each side.
5.Meanwhile, in a separate mixing bowl, combine fresh key lime juice, sweet cream of coconut, curry powder, cayenne pepper, sea salt, and minced scallions.
6.Whisk ingredients together until well combined.
7.Serve hot Conch Fritters with the Coconut-Lime-Curry Dipping Sauce and garnish with parsley if desired.
