Jamaican Ginger Pralines are a twist on traditional pralines that originated in the southern United States. These pralines are flavored with powdered ginger and dark rum (or vanilla extract) and are filled with crunchy pecans (or walnuts). They are perfect for holidays, family gatherings, or anytime you want a sweet treat with a little bit of spice. These pralines are also a great gift for friends and family and can be easily packaged in a clear cellophane bag tied with a festive ribbon.

Instructions

1.Line a baking sheet with parchment paper.
2.In a large, heavy-bottomed saucepan, combine the sugar and baking soda and place over medium-high heat.
3.Add the buttermilk, corn syrup, and ginger to the saucepan and stir to combine.
4.Cook the mixture for 15-20 minutes, stirring frequently, until it reaches the soft ball stage (235-240°F).
5.Remove the pan from the heat and stir in the butter, rum (or vanilla), and pecans (or walnuts) until well combined.
6.Quickly drop spoonfuls of the mixture onto the prepared baking sheet and let cool for at least 30 minutes before serving.

They are also a great make-ahead dessert that can be stored in an airtight container for up to 1 week.
