1 lb boneless skinless chicken breast , diced
olive oil , divided , as needed
1 cup onion , diced
1/2 cup bell pepper , diced
2 jalapenos , seeded and minced
1/2 cup butternut squash , diced
2 garlic cloves , minced

1 tablespoon cornstarch
1/2 teaspoon cinnamon

1/2 cup raisins
1/4 cup dried coconut
1 cup diced tomatoes with juice , canned
1/2 teaspoon salt
1/2 cup water
8 flour tortillas
3 eggs
2 tablespoons water
1/4 teaspoon cayenne pepper
1/8 teaspoon nutmeg
1/2 cup sour cream
1/2 teaspoon curry powder , sweet or mild
1/8 teaspoon cayenne pepper
2 tablespoons fresh cilantro , minced

Instructions

6.In a separate skillet, scramble the eggs with 2 tablespoons of water, cayenne pepper, and nutmeg.
7.On each tortilla, spread a spoonful of sour cream and sprinkle with curry powder and cayenne pepper. Add a spoonful of the chicken picadillo mixture and the scrambled eggs. Garnish with fresh cilantro before serving.
