4 medium beetroots, peeled and chopped
4 cups vegetable broth
1 cup coconut milk
1 tbsp honey

Instructions

1.In a large pot, heat olive oil over medium heat.
2.Add onion and garlic and sauté until softened.
3.Add beetroots and vegetable broth, bring to a boil and cook until beetroots are tender.
4.Using an immersion blender or blender, purée the soup until smooth.
5.Stir in coconut milk and honey and continue to cook for another 5 minutes.
6.Season with salt and pepper to taste.
