Ingredients

6 ounces dried fruit ( or raisins )
4 cups all-purpose flour
3 teaspoons baking powder
1/2 tablespoon salt
2/3 cup granulated sugar
1 egg , beaten
3/4 cup milk
1/4 lb margarine , melted
1 teaspoon vanilla extract
3/4 cup coconut milk
1 small coconut , grated ( about 2 cups )
Coconut Bread is a popular bread dish endemic to Guyana, located in the Caribbean. It is made using a combination of dried fruits, all-purpose flour, baking powder, salt, sugar and grated coconut. This bread dish has a sweet, nutty taste and is easy to make at home. The bread is usually served as a breakfast meal, brunch or as a snack, and can be enjoyed with a glass of fruit juice, tea, or coffee to complement its flavor.

Instructions

1.Preheat oven to 350°F or 180°C. Grease a standard size loaf pan and set it aside.
2.In a large mixing bowl, sift together the flour, baking powder and salt. Then, add in the sugar and dried fruit (or raisins) and stir to mix well.
3.In another bowl, beat the eggs and add the melted margarine, milk, vanilla extract and coconut milk. Stir to mix well.
4.Gradually add the egg mixture to the flour mixture while stirring continuously until well blended. At this point, fold in the grated coconut and stir until the batter is evenly mixed.
5.Pour the mixture into the prepared loaf pan and bake for about 1 hour or until a toothpick or cake tester inserted in the center of the bread comes out clean.
6.Let the bread cool in the pan for 10 minutes before transferring it to a wire rack and allow it to cool completely for about 30 minutes before slicing and serving.
