Ingredients

2 chicken breasts
2 sweet potatoes
1 red bell pepper
1 yellow onion
1/4 cup olive oil
1 tbsp honey
2 tbsp apple cider vinegar
1 tsp paprika
Salt and pepper to taste

Instructions

1.Preheat grill to medium-high heat
2.Slice sweet potatoes into 1/4 inch thick pieces, cut red bell pepper into 1 inch thick slices, and cut yellow onion into wedges
3.In a small bowl, whisk together olive oil, honey, apple cider vinegar, paprika, salt and pepper
4.Brush chicken breasts with 2 tablespoons of the marinade
5.Brush remaining marinade onto sweet potatoes, red bell pepper, and yellow onion
6.Place chicken and vegetables on grill
7.Cook chicken for 6-7 minutes on each side or until internal temperature reaches 165°F
8.Remove chicken from grill and cover with aluminum foil, let rest for 5-10 minutes
9.Remove vegetables from grill when cooked to desired texture, brush with remaining marinade before serving
10.Serve chicken with sweet potato salad
