Instructions

1.In a large bowl, combine 2 cups of all-purpose flour and yeast, mix well.
2.Add water, brown sugar, vegetable oil, salt, orange zest, caraway seed, fennel seed, and eggs and mix everything well.
3.Add 2 cups of rye flour and mix well. Add additional all-purpose flour, 1/2 cup at a time, until the dough is soft and still slightly sticky.
4.Cover the dough and let it rise until it has doubled in size, about 1 hour.
5.Preheat the oven to 375 degrees F (190 degrees C), and grease 2 loaf pans with vegetable oil.
6.Knead the dough on a floured surface for 5-10 minutes. Divide it into two portions and shape them into loaves. Place them in the prepared pans and let them rise for another 30 minutes.
7.Bake for 30-35 minutes or until the bread reaches 200 degrees F (95 degrees C) when tested with an instant-read thermometer. Remove from oven and let it cool before slicing.
