Instructions

1.Preheat the oven to 350°F (180°C)
2.In a large bowl, combine the mashed bananas, oats, and chopped nuts, mixing well.
3.Add the cornmeal, cooking oil, almond essence, raisins, and salt to the mixture, stirring until well blended.
4.Pour the batter into a greased 9-inch (23cm) baking pan and smooth the top with a spatula.
5.Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
6.Remove from oven and let cool completely before slicing and serving.
