Ingredients

1 lb cod fish fillet
2 garlic cloves , crushed
3/4 cup parmesan cheese
2 eggs
3/4 cup breadcrumbs
1 tablespoon parsley , finely chopped
1 tablespoon thyme , finely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 - 1/2 scotch bonnet pepper , finely diced
1/2 cup flour ( for dusting )
2 -3 cups vegetable oil ( for frying )

Instructions

1.Boil the cod in a saucepan until tender, approx 8min and let it cool.
2.Flake the fish finer and mix with garlic, finely diced scotch bonnet pepper, flour, parmesan cheese, parsley, thyme, breadcrumbs, salt and pepper.
3.Shape the mixture into small fish balls of 1 inch size.
4.Heat oil in a deep saucepan or fryer to 375 degrees F (190 degrees C).
5.Dredge fish balls in flour and fry in hot oil until golden brown for 3-4 minutes.
6.Drain on paper towels and serve with your favorite dipping sauce!
