Ingredients

4 lbs chicken pieces ( give or take )
1 tablespoon canola oil
1 1/2 teaspoons sea salt , divided
3/4 teaspoon fresh ground pepper , divided
1 tablespoon butter
1 small onion , diced
1 cup long-grain rice , uncooked
3 garlic cloves , minced
1 can chicken broth
1 can coconut milk
3/4 cup unsweetened pineapple juice
1/4 teaspoon crushed red pepper flakes
4 green onions , chopped diagonally
1 jar macadamia nuts , toasted and chopped
fresh pineapple ( optional )
Dreaming of the Islands Chicken and Rice is a delicious and aromatic dish that is inspired by the flavors of the Caribbean. Instructions

1.Preheat the oven to 375°F (190°C).
2.Rinse the chicken pieces under cold running water and pat them dry with paper towels. Rub the chicken with canola oil, 1 teaspoon of sea salt, and 1/2 teaspoon of fresh ground pepper.
3.Heat a skillet over medium heat and melt the butter. Add the onion and rice and sauté for 2-3 minutes until the onion is translucent. Add the garlic and cook for another 30 seconds.
4.Pour in the chicken broth, coconut milk, pineapple juice, remaining 1/2 teaspoon of sea salt, fresh ground pepper, and crushed red pepper flakes and stir well. Bring the mixture to a boil.
5.Transfer the rice mixture to a 9×13 inch casserole dish and arrange the chicken pieces on top. Cover the dish tightly with foil.
6.Bake for 45-50 minutes, then remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through and the rice is tender.
7.Let the dish stand for 10 minutes before serving.
8.To serve, sprinkle with chopped macadamia nuts, chopped green onions, and fresh pineapple slices (optional).
