1 tablespoon baking powder

2 large eggs
1/4 cup unsalted butter , melted
1 3/4 cups whole milk
melted butter , for brushing griddle

Instructions

1.In a medium saucepan, combine 2 cups of water, 1 cup of sugar, and 1 teaspoon of freshly grated nutmeg over medium heat. Cook until the sugar has dissolved and the mixture comes to a boil.
2.Reduce the heat and simmer for 5 minutes, stirring occasionally.
3.In a large bowl, whisk together the flour, baking powder, 1 tablespoon of sugar, 1 teaspoon of freshly grated nutmeg, salt and ground cinnamon.
4.Add the eggs, melted unsalted butter and whole milk to the dry ingredients and whisk until smooth.
5.Heat a griddle or skillet over medium-high heat and brush with melted butter.
6.Pour 1/4 cup of batter onto the griddle for each pancake.
7.Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown.
8.Serve with sliced banana on top.
