Ingredients

2 cups self-rising flour
1 cup granulated sugar
3 tablespoons oil
3 tablespoons butter , softened
4 egg whites
1/4 cup fresh-squeezed lime juice
1 tablespoon lime zest
1 teaspoon vanilla
1 cup milk plus 1 tbsp . lemon juice ( you will only need 3/4 c . )
1 lemon , juiced
2 ripe mangoes , diced
1/2 papaya , diced
2 plantains , sliced thin ( black & very ripe )
1 cup raisins
1 cup coconut
1/4 teaspoon dried powdered ginger
1/4 cup granulated sugar or 1/4 cup Splenda sugar substitute
2 cups sour cream
1/2 teaspoon cinnamon
1/4 teaspoon vanilla
3 tablespoons rum ( more or less if you like more )
powdered sugar , to taste

Instructions

1.Preheat oven to 350°F.
2.Grease and flour a 9x13 inch baking pan.
3.In a large bowl, whisk together the self-rising flour and granulated sugar.
4.In another bowl, beat the oil, softened butter, egg whites, lime juice, lime zest and vanilla until well combined.
5.Alternately add dry ingredients and 1 cup milk plus 1 tbsp . lemon juice to the egg mixture, beating well after each addition.
6.Pour the batter into the pan and bake for 25 minutes or until a toothpick inserted into the center comes out clean.
7.Cool the cake completely in the pan on a wire rack.
8.Once cool, cut the cake into 1 inch cubes.
9.In a large bowl, mix together the diced mangoes, diced papaya, sliced plantains, raisins, coconut, powdered ginger, 1/4 cup granulated sugar and sour cream.
10.In another bowl, mix together the cinnamon, vanilla and rum.
11.In a large trifle dish, layer the cake cubes, followed by the fruit mixture and then sprinkle with the cinnamon mixture.
12.Repeat the layers until all ingredients are used.
13.Chill the trifle in the refrigerator for at least 1 hour before serving.
14.Sprinkle with powdered sugar just before serving.
