Ingredients

canola oil
1/4 lb conch , cleaned , cooked and diced small
1/2 cup diced onion
1 tablespoon garlic
3 eggs
1 1/2 cups milk
2 tablespoons baking powder
1 teaspoon salt
3 1/4 cups flour
1 tablespoon chopped parsley
1 quart vegetable oil , for frying
Tabasco sauce , to taste
Worcestershire sauce , to taste
spice essence , to taste
island hot sauce , to taste
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano leaves
1 tablespoon dried thyme
1 onion , chopped
2 carrots , chopped
3 scotch bonnet peppers , halved and seeded and stems removed
1 -2 tablespoon vegetable oil
2 tablespoons sherry wine vinegar ( to taste )
kosher salt , to taste
water to cover bell pepper
Caribbean Conch Fritters are a classic appetizer that are commonly found throughout the Caribbean and Florida Keys. Made with conch, a marine mollusk, these fritters are packed with a sweet, briny flavor. They are a crowd-pleaser for any occasion and can be served as an appetizer or paired with a salad for a light meal. Island ' Hot' Sauce is a sweet and spicy tomato-based sauce that is commonly served alongside the fritters. Made with a blend of spices and peppers, this sauce is the perfect complement to the fritters and adds a burst of flavor to every bite.

Instructions

1.In a large mixing bowl, combine the diced conch, onion, and garlic.
2.Add in the eggs, milk, baking powder, salt and flour. Mix together well.
3.Add in the chopped parsley and mix. Cover the mixture and chill it in the fridge for at least 30 minutes.
4.While the fritter mix is resting, combine the paprika, salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano and thyme and mix until well combined. Set aside.
5.In another pan, heat vegetable oil over medium high heat. Add in the onion, carrot and scotch bonnet peppers and sauté until softened. Add in the spice mixture and stir well.
6.Season the mixture with the sherry wine vinegar and kosher salt. Add water to cover the bell pepper and let it simmer on low heat for 30-45 mins. Once done, remove from heat and puree the mixture in a food processor. Set aside.
7.Heat enough vegetable oil in a large, deep skillet for frying on high heat. Once hot, use a small spoon to scoop the chilled fritter mixture into golf ball sized balls. Drop them into the hot oil and fry until golden brown.
8.Once done, transfer the fritters to a paper towel lined plate to drain off the excess oil. Serve with island hot sauce, tabasco sauce, Worcestershire sauce and spice essence to taste. Enjoy!
