1 packet chicken bouillon

2 1/2 cups long-grain rice

Instructions

1.Heat oil in a large pot or dutch oven over medium heat.

4.Add the pigeon peas, water, chicken bouillon, coconut milk, salt and bring to a boil.
5.Stir in the rice and reduce heat to low.
6.Cover the pot with a tight-fitting lid and simmer for 20-25 minutes until rice is tender.
7.Fluff the rice and peas with a fork before serving.
