Instructions

1.Lightly toast cumin seeds, coriander seeds and whole black peppercorns over medium heat in a dry frying pan

3.Rub the powder all over the mahi mahi fillets and keep them in the fridge for 30 minutes to marinade
4.Preheat the oven to 375°F/190°C

6.Sear the fillets for 2 minutes on each side, then transfer them to a baking sheet
7.Bake the fillets for 5-10 minutes, or until they are cooked through
8.While the fillets are baking, heat up another 2 tablespoons of olive oil in the same frying pan over medium heat
9.Add diced onions and crushed garlic, and sauté for 5 minutes until they are softened
10.Add orange juice, lime juice and spiced dark rum into the pan and stir
11.Turn the heat to high and let it simmer for 5 minutes until the sauce is reduced by half
12.Take the pan off the heat and let it cool for a minute
13.Stir in orange segments and chopped fresh cilantro
14.Spoon the mojo over the mahi mahi fillets and serve immediately
