Ingredients

3 quarts of prepared beef stock ( out of cooked neat or prepared with instant granules . )
2 tablespoons shredded onions
2 fresh carrots , sliced
2 zucchini , sliced
1 leek , sliced
1 mirliton , skinned and sliced ( chayote )
1/2 cauliflower , heads separated in florets
2 ears corn , cut of in 4 or 5 thick slices
1 sprig fresh cilantro
1 parsley sprig
2 pasilla chiles , seeded and thinly julienned
1 sliced avocado
pepper ( optional )

Instructions

1.In a large pot, bring the prepared beef stock to a simmer.
2.Add the shredded onions, sliced carrots, sliced zucchini, sliced leek, sliced mirliton, cauliflower florets, cilantro sprig, and parsley sprig to the pot. Return to a simmer.
3.Reduce heat to low, cover, and continue cooking for 30 minutes.
4.Remove cilantro and parsley sprigs from the pot.
5.Add the pasilla strips and sliced avocado to the pot. Cook for an additional 5 minutes.
6.Season with pepper to taste, if desired.
7.Serve hot and enjoy!
