1/3 cup low-sodium taco seasoning ( I use CoffeeB 's Taco Seasoning Mix with less salt )
2 cups beef broth ( may need more )
1 cup corn
1 can chickpeas ( or your preferred bean )
1 can kidney beans ( or your preferred bean )
1 can mushrooms , sliced , with juice
1 can tomatoes , crushed or diced
cheddar cheese , grated ( optional )
avocado , diced ( optional )
tortilla chips , broken ( optional )

Instructions

5.Empty all cans of corn, chickpeas, kidney beans, mushrooms along with the juice from each can into the crockpot.
6.Add the beef mixture to the crockpot and mix.
7.Cook on low for 6-8 hours or on high for 4-5 hours.
8.Add tortilla chips, cheddar cheese, and avocado for garnish as desired and serve hot.
