1/2 kg ground beef
salt and pepper , to taste
50 g chihuahua-style cheese , cut in small cubes
4 large tomatoes , quartered

Instructions

1.In a bowl, soak bread in milk for 5 minutes and then mash it until smooth.
2.Add tomatillos, onion, garlic, mint leaves, cumin, and ground beef to the bowl and mix everything thoroughly.
3.Season the mixture with salt and pepper and make small meatballs.
4.Push cheese cubes into the center of each meatball.
5.In a blender, blend quartered tomatoes, garlic, onion, chipotle chiles, and water until smooth.
6.Heat oil in a pot over medium heat and pour the tomato-chipotle puree into the pot. Cook for a few minutes.
7.Add in the chicken broth and bay leaf and bring to a boil.
8.Reduce the heat to a simmer and carefully add meatballs to the pot. Cook for 25-30 minutes.
