Ingredients

1 roasting chicken , cut up
1 medium onion , diced
1/2 cup dry white wine
1 cup chicken broth
2 garlic cloves , minced
2 teaspoons white pepper
2 teaspoons dried oregano
2 1/2 teaspoons salt ( divided )
2 1/2 limes , juice of ( divided )
1/2 cup half-and-half
1 pinch cayenne pepper
1 lime , zest of ( or more )
4 -6 corn tortillas
16 ounces sour cream ( I use gluten free )
1 cup cheddar cheese , grated ( I use more )

Instructions

1.Preheat oven to 350°F (175°C).
2.In a large pot, add the chicken pieces and cover with water. Add 1 tsp salt and 1/2 lime juice. Bring to a boil and simmer until chicken is cooked. Save the stock for later use.
3.In another large pot add onion and saute for a few minutes. Then add white wine and reduce until almost dry. Add garlic and saute for another minute. Then add chicken broth, white pepper, oregano, salt, and lime juice. Add half-and-half and cayenne pepper to the pot, mix well.
4.Take cooked chicken and mix with half of the sauce. Add lime zest to the chicken for extra flavor. Heat up tortillas and put the chicken mixture inside them to form the rolls.
5.In a baking dish, put some sauce at the bottom, then place the chicken rolls in a single layer. Top with the rest of the sauce and grated cheddar cheese.
6.Bake in the oven for 25-30 minutes until cheese is melted and enchiladas are heated through.
