1 herb-roasted rotisserie chicken , skin removed , meat pulled into chunks ( about 2 1/2 cups )
1 cup finely shredded cheddar cheese , divided in half
1 box corn muffin mix
1 can diced mild green chilies , drained
1 large egg
1/3 cup milk

Instructions

1.Preheat oven to 400°F.
2.Heat a 10-inch ovenproof nonstick skillet over medium-high heat and add 2 tablespoons of chili powder, oregano, cumin, and salt. Cook and stir for 1 minute.
3.Stir in oil, onion, and garlic. Cook and stir until onion is tender.
4.Add frozen bell pepper, tomatoes and green chilies (1 can drained), olives, beans, corn, and chicken. Cook until hot.
5.Mix muffin mix with milk, egg, and diced green chilies (1 can drained).
6.Sprinkle 1/2 of the cheese over chicken mixture and pour muffin mixture over cheese.
7.Sprinkle remaining cheese and 1 teaspoon of chili powder over muffin mixture.
8.Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
