Ingredients

1 lb fresh tomatillos or can tomatillos
2 garlic cloves , peeled
2 jalapeno peppers , seeded
2 tablespoons cilantro leaves
2 tablespoons onions
1/3 cup sour cream
1/3 cup plain yogurt
1 tablespoon honey
1/4 teaspoon salt
1/3 cup canned diced green chilis
6 corn tortillas
2 cups shredded cooked chicken
2 cups monterey jack cheese , Shredded
1 cup hazelnuts , Roasted and Chopped
These Spicy Chicken and Hazelnut Enchiladas are a twist on the classic Mexican dish. The creamy filling is made with shredded chicken, roasted hazelnuts, and melted cheese, and it's all wrapped up in soft corn tortillas. The homemade sauce is made with tomatillos, garlic, and jalapenos, and it's the perfect combination of spicy and tangy. This dish is perfect for a cozy night in, or for a crowd-pleasing dinner party.

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a blender or food processor, puree the tomatillos, garlic, and jalapenos.
3.In a medium bowl, stir together the pureed mixture, cilantro, onion, sour cream, yogurt, honey, and salt. Set aside.
4.In a large bowl, stir together the chicken, 1 1/2 cups of cheese, hazelnuts, and canned chilies. Set aside.
5.Heat the tortillas until they are soft. Spoon chicken mixture down the center of each tortilla. Roll up each tortilla and place seam side down in an 8x11 inch baking dish sprayed with cooking spray.
6.Pour the sauce over the enchiladas, and sprinkle with the remaining cheese. Cover with foil.
7.Bake for 30 minutes. Remove foil and bake an additional 10 minutes, or until hot and bubbly.

The combination of the spicy sauce and the creamy filling make this dish a flavor explosion.

It’s also a great way to use leftover cooked chicken.

CONS

This dish may be too spicy for some people.
If you have a low tolerance for spice, you can reduce the amount of jalapenos or leave them out altogether.
