Fajitas are a popular Mexican dish consisting of seasoned meat and vegetables served on a warm tortilla. This recipe puts a twist on traditional fajitas by deep-frying the chicken or steak to give it a crispy texture. The sautéed vegetables add a hearty and healthy component to the dish. Fajitas are typically served with toppings such as cheese, sour cream, and guacamole, and can be customized to suit individual tastes. They are a perfect meal for busy weeknights, as they can be prepared in advance and assembled quickly when ready to eat.

Instructions

1.Cut the chicken breasts or round steaks into thin slices.
2.Cut the jalapenos, anaheim chilies, green peppers, and onion into thin slices.
3.In a shallow dish, mix together the 1/4 cup of flour and the fajita seasoning mix (or taco seasoning mix).
4.In a medium bowl, whisk together the 1 cup of flour, beer, salt, and pepper until smooth. Fold in the beaten egg whites.
5.Heat the oil in a deep fryer or pot to 375°F.
6.Dip the sliced chicken or steak into the flour mixture, shaking off any excess. Dip the slices into the batter mixture, coating them evenly.
7.Using tongs, carefully place the slices into the hot oil and fry until golden brown and crispy, about 3-5 minutes.
8.Remove the chicken or steak from the oil and place on paper towels to drain excess oil.
9.In a separate pan, sauté the sliced jalapenos, anaheim chilies, green peppers, and onion until tender.
10.Serve the deep fried chicken or steak alongside the sautéed vegetables in warm tortillas with your favorite toppings.

PROS

Deep frying gives the chicken or steak a crispy and flavorful coating, while the sautéed vegetables add a healthy dose of nutrients.

Fajitas are a versatile and customizable meal that can be enjoyed by the whole family.

CONS

Deep-fried foods are high in calories and fat, and the added batter can increase the overall calorie count.

Fajitas can be messy to eat, as the fillings tend to fall out of the tortillas.

HEALTH & BENEFITS

While deep-fried fajitas may not be the healthiest option, they can still provide a good source of protein and vitamins from the vegetables.
Jalapenos and anaheim chilies are a great source of vitamin C and have been linked to anti-inflammatory properties, while onions provide a good source of fiber and antioxidants.
