Ingredients

2 lbs chicken breasts
10 large flour tortillas
1/2 onion , chopped
1 large garlic clove , minced
1 tablespoon oil
1 can green chilies
1/4 - 1/2 cup sour cream
1/2 cup tomato sauce
1 -2 teaspoon cumin
4 tablespoons butter or 4 tablespoons margarine , melted
1 1/2 - 2 cups cheddar cheese , shredded
Chicken Chimi Chimies, or Chimichangas, are a popular Mexican dish that are essentially deep-fried burritos. The dish originated in the Sonoran Desert region of Mexico and the southwestern United States. It is typically served with a side of rice, beans, and guacamole. Chicken Chimi Chimies are a spin on the traditional beef and pork version and are made with shredded chicken, green chilies, sour cream, cheese, and spices. Instructions

1.Preheat the oven to 400°F (200°C).
2.In a skillet, cook the chicken breasts over medium-high heat for 5-7 minutes until no longer pink. Remove from skillet and shred the chicken.
3.In the same skillet, sauté the onions and garlic for 2 minutes until tender. Add the green chilies, tomato sauce, cumin, and sour cream. Stir until well combined.
4.Add the shredded chicken to the skillet mixture and stir until well combined. Set aside.
5.Brush each tortilla lightly with melted butter, then spoon the chicken mixture onto each tortilla. Top with shredded cheese, then fold the sides of the tortilla inward and roll tightly.
6.Place the rolled up tortillas on a baking sheet lined with parchment paper. Brush with any remaining melted butter.
7.Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
